An Overnight Kaiser Roll Recipe That Takes More Time Than Effort

There is a common belief that making rolls takes a lot of effort and is too difficult for the average home cook. But this belief is not true! Sure, some kaiser roll recipes may be complicated, but you can make some delicious kaiser rolls by following simpler recipes — like the one in this article. This recipe takes a lot of time as the dough needs to rest in the fridge overnight, but it only requires basic cooking skills. Without further ado, here it is:

Ingredients:

  • 3 cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 1/2 teaspoon sugar
  • 3/4 cup water, warmed to 120 degrees F
  • 1 teaspoon salt
  • 2 tablespoons melted butter
  • 1 egg
  • Milk, for topping rolls
  • Sesame seeds, for topping rolls
  • Oil, for oiling the bowl

Step 1: Making the sponge

To get started, combine the water, yeast, sugar, and one cup of the flour in a large mixing bowl. Mix these ingredients together well, which should create a very loose batter. Cover this batter, and put it in the fridge overnight, or for at least 12 hours. 

Step 2: Adding to the sponge

Pull the sponge out of the fridge, and let it rest at room temperature for an hour. Then, add the salt, a cup of flour, and the melted butter. Mix well until a uniform dough forms. Then, gradually add the remaining flour, except for about 1/4 cup. Put that remaining quarter cup of flour on a flat work surface, and place your dough on top of it. Knead the dough by pushing it back and forth with your hands. Do this for about 5 minutes, or until all of the flour has been incorporated.

Step 3: Letting the dough rise

Place the dough in a large bowl that you've lightly coated with oil. Cover, and let the dough rise for 2 hours.

Step 4: Shaping the rolls

Divide the dough into 12 even portions. Roll each portion into a ball. The easiest way to do this is to use your hands to pull the top of the dough ball over and under the dough ball. Spread the dough balls out on a baking sheet, leaving at least 3 inches between them.

Step 5: Topping and baking the rolls

Let the dough balls rise for 45 minutes. Then, brush each one with milk, and sprinkle it with sesame seeds. Place the rolls in a 400 degree F oven, and let them back for 20 minutes or until golden brown. Let cool, and enjoy.
